Every morning I stop at the same bar on Calle Relatores for a cortado and a palmera, just like I have for the last fifteen years — that rhythm is Madrid to me. I know which tabernas still serve cocido madrileño on Thursdays the way it should be, where the verbenas actually happen before they get written up anywhere, and why the city only really comes alive after ten at night. My passion is showing people that Madrid's soul lives in its routines, not its postcards.
