I once spent three days eating nothing but different variations of hummus across Dubai just to settle an argument about which neighbourhood does it best (Deira won, by a lot). My passion is knowing exactly which table to book, which chef is doing something quietly brilliant right now, and why the real dining scene here goes so far beyond what most people expect. I know this city's food story the way others know their own kitchen.
