Every morning I walk through Deira's spice market before most of the city wakes up — not for any particular reason, just because it grounds me. My passion is finding the restaurants that Dubai's food obsessives actually argue about, from the Emirati home cooking hidden in Old Dubai to the chef's tables that aren't on any list yet. I know this city's appetite better than almost anything else about it.
